Arati Kaya (Urpine Plaintain) sliced and diced with onions and tomatoes. Made in traditional andhra style and has its aroma spreading everywhere.

Aratikayalu - 2 skinned and cubed

Onions - 1 finely chopped

Tomatoes - 1 finely chopped

Turmeric - 1 big pinch

Chilli powder

Salt

Oil

For Paste

Ginger (chopped in small cubes) - 1 tablespoon

Garlic - 6-7 cloves

Shredded coconut - 1 tablespoon

Methods/steps

Cook aratikayalu with a cup of water. Add turmeric and salt. Cook till they become tender. Drain water and keep aside.

Meanwhile make paste with the above stated ingredients.

Take a pan and add sufficient oil. Add finely chopped onions and fry them till they turn golden brown. Add tomatoes, and paste and cook for 2 mts till oil oozes out.

Add cooked aratikayalu along with 1/2 cup of water. Add chilli powder and salt to taste and mix well. Simmer curry for 5 mts and serve hot with rice.
