Delicious fry made with Long Brinjals.

Long Brinjals - 2 chopped into small pieces

Onions - 1/2 finely chopped

Turmeric - 1 teaspoon

Chilli powder - 1 tablespoon

Garlic - 8 cloves

Salt

Oil

For Seasonings

Mustard seeds - 1 tablespoon

Chana dal - 2 tablespoon

Zeera - 1 tablespoon

Methods/steps

Heat oil in a saucepan.

Splutter mustard seeds. Fry chana dal and zeera.

Add onions and garlic and fry till onions turn golden brown.

Add the chopped brinjal, turmeric and cook by covering the lid.

Once cooked add chilli powder and salt and mix well.

Cook for another 2 - 3 minutes and delicious brinjal fry is ready.

Goes well with Chapathis and Puris.
