Brinjal Peanut Masala

Brinjals fried with fried peanut powder. Has a strong peanut flavor and served well with chapathis.

Brinjals - 5 small

Peanuts - 25 seeds

Mustard seeds - 1 teaspoon

Zeera - 1 teaspoon

Garlic - 5-6 cloves

Cocounut - 3-4 small pieces

Red chillies - 4

Onions - 2

Tamarind - 2 lemon sized balls

Salt

Turmeric

Methods/steps

Fry peanuts in a seperate pan without oil. Now take a pan and add 2 teaspoons of oil. Add mustard seeds, zeera and red chilli and let them fry.

Add peanuts, mustard seeds, red chilli and zeera, garlic cloves, coconut pieces to mixie and grind them to a fine paste. Add sufficient water. Dont add too much.

Take a tava. Add 8-9 tablespoons of oil. Add finely chopped onions and let them fry till they turn golden brown. Now add chopped brinjals and let them also fry in oil for 5 mts.

Add the peanut mixture, salt, turmeric and let the whole mixture fry in the oil. Wait till oil oozes out. If you think oil is not sufficient add little bit more oil.

Meanwhile squeeze thick tamarind juice out of the tamarind soaked in hot water. Add this juice to the mixture and let the whole gravy cook for 10 mts.

Garnish with Coriander leaves and it goes well with Chapathis.
