Chinese Egg Fried Rice

Eggs - 6

Rice - 2 cups soaked in water for half an hour

Cabbage - 1/2 cup finely chopped

Carrots - 1/2 cup finely chopped

Beans - 1/2 cup finely chopped

Capsicum - 1/2 cup finely chopped

Spring onions - 1/2 cup finely chopped

Coriander - 1/2 cup chopped

Chilli sauce

Soy sauce

White pepper

Black pepper

Ajinomoto

Salt

Oil

Methods/steps
1)

Boil 5 cups of water.

Drain the soaked rice and add to the boiling water.

Boil for 10 mts till rice is 3/4th cooked.

Add 3 - 4 tablespoons of oil and mix properly.

Turn off the flame and drain the water and keep the cooked rice aside.

Chop all the above mentioned vegetables as shown.

Take two eggs. Separate yolk from the white egg.

Add black pepper and salt to the white egg and mix properly.

Heat 1 teaspoon oil in a pan and spread the white egg evenly on the pan.

Cook till the both sides are cooked.

Take the prepared omelette aside and cut into small pieces as shown.

Beat the remaining eggs and the left yolk and keep aside.

In a saucepan heat 5 - 6 tablespoons of oil.

Add the egg and mix it properly to make small pieces. Mix till the egg is thoroughly cooked.

Now add the prepared vegetables and keep mixing till vegetables turn tender.

Now add the cooked rice, 1 tablespoon chilli sauce, 1 teaspoon soy sauce, 1 big pinch ajinomoto, 1 teaspoon white pepper, sufficient salt to the vegetables.

Keep mixing thoroughly for another 5 mts.

Ensure that all the ingredients are mixed thoroughly.

Mix the prepared white egg pieces and mix well.

Turn off the flame and add the spring onions and coriander.

Mix well and serve delicious Chinese Egg fried rice hot.
