Mamidikaya Thokku Pachadi
Ingredients
Mango - 1 cup shredded
Red chillies - 20
Mustard seeds - 2 tablespoons
Fenugreek seeds - 1 tablespoon
Hing - pinch
Oil
For Seasoning
Mustard seeds - 1 tablespoon
Chana dal - 1 tablespoon
Zeera - 1 teaspoon
Methods/steps
1)
- Shred mango pieces finely and keep aside.

- Fry red chillies in a pan and keep aside.
- Now roast mustard seeds and fenugreek seeds.
- Be careful and avoid over roasting the ingredients since the taste turns bitter.
- Add hinge and make a fine powder and keep aside.

- Mix the prepared powder, salt with shredded mango pieces.
- One can either mix in pestle and mortar or in a blender by stirring in once.

- In a pan add 2 cups of oil and heat the oil.
- Add mustard seeds, chana dal and zeera and fry them.
- Add to the prepared mango mixture.
- Mix well. Make sure the oil floats since the pickle absorbs most of the oil in 5 minutes.
- Delicious Mamidikaya Thokku pachadi is ready and serve with hot rice.

Additional Tips
Add chilli powder for its flavor and color.
