Shrimp Fried Rice

Delicious Indian style fried rice made with shrimp.

Making Shrimp

Shrimp - 1 cup

Corn flour - 2 tablespoons

Maida - 1 tablespoons

Chilli sauce - 1 tablespoon

Soy sauce - 1 teaspoon

Egg - 1

Chilli powder

For Fried Rice

Rice - 2 cups

Beans - 1 cup chopped

Carrots - 1 cup finely chopped

Onions - 1 cup chopped

Cabbage - 1 cup chopped

Green chillies - 10 finely chopped

Coriander - 1/2 cup finely chopped

Eggs -2

Chilli sauce

Soy sauce

Ajinomoto

Salt

Oil

Methods/steps
1)

  • Mix cornflour, maida, chilli sauce, soy sauce, sufficient chilli powder and salt in a bowl.
  • Beat an egg and keep aside.
  • Add the egg to the prepared mixture and make into a thick paste.
  • Dip the shrimp pieces in the paste.
  • In a pan add sufficient oil for deep fry.
  • Heat the oil and add the pieces.
  • Fry till the shrimp is cooked.

  • Chop all the vegetables as shown.
  • Soak rice in water for half an hour and drain the water.
  • Boil 4 cups of water.
  • Add oil to the boiling water.
  • Now add the rice to the water and cook till the rice is 3/4 th cooked.
  • Drain the water and keep aside.

  • In a wok add 5 -6 tablespoons of oil.
  • Heat the oil.
  • Meanwhile beat the eggs and add to the heated oil.
  • After one minute mix thoroughly to shred the omelette into pieces.
  • Add onions and chillies and fry for 5 minutes.
  • Now add all other vegetables and fry till the vegetables turn tender.
  • Now add the boiled rice, 1 tablespoon chilli sauce, 1 teaspoon soy sauce, pinch of ajinomoto and sufficient salt.
  • Mix thoroughly to ensure that all the ingredients are properly mixed.
  • Now add the prepared shrimp and cook for one more minute.
  • Now add the chopped coriander and turn off the stove.
  • Delicious indian style Shrimp fried rice is ready.
